澄粉 Gluten Free Wheat Flour, is made by rinsing the normal wheat starch with water to wash out the gluten content.
This is a gluten free flour made of wheat. It's used to make many different type of traditional Dim Sum in Hong Kong such as Har gow (a clear dumpling with whole shrimp inside), and all types of Fun Guo (clear and firmer jelly type of texture, it can serve savory or sweet as desert), and crystal dumplings etc.
